is it easy to sneak up on a turkey

While their eyesight is not fabulous, turkeys have well enough hearing as so that it is difficult and annoying to sneak up and catch them. But some of them are stupid or slow enough to catch without much hassle. Also, the below statement (about the placement of the eyes) is true for most fowl. This is to have a slight advantage from predators. The ones I caught though didn't run when they saw me though, rather when they heard me.

Which kind of turkey, domestic or wild? A domestic turkey is bred to have particular traits such as large breast and meaty drumsticks, with that breeding came other traits as more docile and perhaps lessened senses.

A wild turkey is a different story. It is a survivor that does not intend to end up anyone's meal if it can prevent it. It relys on hearing and eyesight to avoid predators. Wild turkeys are pretty good at it. It takes either skill or luck for a hunter to get one.

Must be, it never sees Christmas. :)

I'm rather proud of that one!!

Actually, very difficult. They have eyes on the side of their head, so have a probably 270 degree field of vision, and are tuned in to movement.
