There are many ways to do cars in a movie - you can actually have someone driving the car, have a stunt driver do the driving, have a small remote control model on a scaled down set, or even use a fake car being pulled by a chain, or with modern technology you could make a computer generated car. It all depends on the movie budget, what kind of scene the movie is trying to create, what the situation is, all sorts of variables.

Sometimes they drive. Sometimes a double or stunt driver will drive.
Usually when there is a scene being filmed through the windscreen or side window, the car will be on a low trailer being pulled behind a truck. The camera crew and director will be on the truck as well doing the filming. They may even remove the door to make it easier to film it.

In the Special Features section of The Fast And The Furious dvd, they state that NONE of the cars ever got over 40mph! Because if they went faster than that, the film would blur! So, whenever you see a car going 'fast' in a movie, now you'll know that it's really not going that fast at all. ;-)

Some do, some don't. Usually depends on the surety bonding company. The new Denzel movie has a nice little video about the way they shot his scenes in the HumVee, pretty slick process.

Sometimes they really are driving it. Or a stunt driver. Sometimes they are at the back of a trailer and that is doing all the driving and they are just pretenhding.

both, for close up shots the car is incased buy a metal frame with several cameras attached, for wider shots they will actually drive the cars,for stunt shots for insurance purposes they will have stunt drivers perfrom

The car actually sits on a moving pully I call it. There is someone in front of the pully thing pulling it so it can move on its own. TV isn't it amazing!
