Currently have 215 60 R16's on my subaru. The snow tires I am looking for are backordered in my size but available in 225 60 R16's. The tires are also rated for all season use, so I may just leave them on there. What are the pros and cons of going with this larger size?

They should be alright, they are just a bit wider. The road noise would be more because of the wider tread.
However depending on the model year of your car if you put tires on your car that are not the size recommended by Subaru they might try to void your warranty. All season are good in the right size, depending on where you live and how much snow you get I would recommend 4 snow tires on rims. It's worth it.
With the AWD it will definitely improve your winter drive.

Good question. The wider tires will almost certainly be louder on the highway (especially if you're getting snow tires). However, the size difference really isn't so substantial that you should have any problems. For the most part, larger tires should be a positive. You'll get better traction and handling.

For what it's worth, you do note that you drive a Subaru. If your vehicle is all-wheel-drive, as I suspect it is, your all season tires should be sufficient for all but the very worst of winter conditions. Either way, it really doesn't sound like you can go wrong in your choice.

Larger winter tires is better than bald all seasons, no doubt about that. Most tire installers, will tell you whether or not your rims can accomodate one tire width smaller or larger . It all depends on the rims.
If given the choice of which one to pick, Ill go for the wider, deeper treads.
I would pick mud /snow radials as first choice. but this depends on how bad the winters are in your area.
A really good all season tires with deep treads would be next choice. if the winters are mild. It probably is also less costly that way.

The Winer Tire Corporation does not recommend putting OVER-SIZE or UNDER-SIZE tires on any vehicle .
