If you are familiar with/educated in dance, you could look to technique. If you're a "civilian," you can just judge if you were moved/entertained.

every performance is depicting something, sometimes its connected to history, mythology, dance drama whatever. depends how the performer has been able to convey that to an audience. also fluidity of a dancer's movements come across very strongly even to an audience not conversant with dance. along with the dance whether the costume worn has been appropriate or not. facial expressions also convey so much in a dance.

Look at the movements. Are they sharp? The symmetry of the body to the hands, the gracefulness of movements. The congruency.etc
