To have a golden brown turkey, rub butter over the entire outer skin. Place several pats of butter under the skin as well. Place a tin foil tent over the breast area because the breast meat cooks faster than the legs. Baste, baste, baste. Some people say placing apples and carrots and onions inside the cavity help keep it moist. I'd say 18 to 20 lbs. would be okay.

Also, anyone who is using those disposable aluminum roasting pans, this is the reason your turkey is never brown. Get a dark roasting pan. It'll turn out nice and golden brown.

Also, just type in Thanksgiving Turkey in search, this time of year, you'll get a jillion sites to visit. Good luck.

This is my recipe for flavorful and extremely moist turkey:

Multiply the ingredients by the pounds of the turkey:

1 tsp. of kosher salt
1/4 tsp of oregano
1/4 tsp of ground black pepper
1 clove of garlic crushed
1 tsp of olive oil
1/2 tsp of white vinegar
1 tbsp of Accent (optional) for every 5 pounds of turkey!

Rinse your turkey and pat dry inside and out. Mix all of the ingredients above in a bowl and rub the turkey thoroughly with it at least the day before. Leave in the fridge breast side down.

On Thanksgiving day place the turkey breast side up in roaster, melt a couple of sticks of butter and rub the turkey with it. Put in the oven at 350 degrees covered with aluminum foil. Remove the foil tent for the last 30 minutes of roasting and baste with the pan juices this will give you a golden brown and cruchy skin. When done, remove turkey from oven and let the turkey rest at least 1/2 hour covered with aluminum foil. I would not recommend stuffing the turkey due to bacterial growth. A turkey can go bad quick if you stuff it. Some may disagree, but hey opinions are like a*shol*s everyone got one and they stink!

The size of the turkey should be about 1 1/2 lbs per person. I think a 12 to 15 lbs should do. If you like leftovers then go big and freeze the rest.

IN MY OPINION THIS IS THE BEST TURKEY SEASONING IN THE WORLD AND COULD EASILY WORK WITH ROASTED OR FRIED TURKEYS. EVERYONE THAT HAVE TASTED MY RECIPE WOULD NOT GO BACK TO THE WAY TURKEY IS USUALLY ROASTED JUICY WITHOUT FLAVOR. SKIP THE CHEESECLOTH.

Good luck hope this helps. Take care and God bless

I don't know about a cheese cloth, check Walmart? But, to get a golden juicy turkey use an oven bag. This seals in the moisture from the turkey, and no basting is needed. You may remove the bag 20 minutes before turkey is done, to get more of a golden brown color if you like. Average 3 lb for each person, so 15 lbs should do.

I cook my turkey with the breast side down so the breast stays moist. The last 45 minutes or so, I turn the turkey over so the skin gets crisp. Always produces a moist turkey. Good luck.

I've found that for a really moist turkey it is helpful to brine it. Basically put it in a cooler with saltwater and ice the night before.

Check out www.foodtv.com for lots of tips.
