Field hockey can sometimes, but it's not the general way of doing so these days. Bully-offs tend to be more of a "rock-paper-scissors" method of foul dispute resolution; a referee may call one if he is aware of an offense having been committed but doesn't know which side should receive the play.

By defintion, "bully-off" is a face off. So that would include Hockey and Field Hockey.

Not (Field) Hockey.
The game starts each half these days with what is called a centre pass.
A bully takes place to restart a match when time or play has been stopped for an injury or for any other reason and no penalty has been awarded.
