I am going to order an Wacom Intuos3 6 x 11. When I am on travel I may have to use it also in non-widescreen(regular) monitors too. Is it possible to remap it to 6 x 8 size?

Absolutely. It would be in your preferences. There will be a setting to reset your "Tablet Screen Mapping" under the "Mapping" tab. You will find the information on page 40 of that .pdf linked below.

You will find a weath of other handy settings in there. You can map you screen to just a smaller portion of tablet it self. You can even map to multiple monitors. You will find other handy settings in there for your mouse and custom function keys.
