Both 'gray' and 'grey' are acceptable spellings for both the color (used as an adjective or a noun) and the verb form of gray.
Gray with an 'a' is more commonly used; however, both are completely correct spellings and can be found in any English dictionary.
Grey, with an 'e' as a proper noun--most commonly seen as a last name or in Earl Grey tea--is spelled only with an 'e' unless the correct family name spelling calls for an 'a'.
Use whichever spelling you prefer, just be consistent when using the word repeatedly in the same report or correspondence.

I spell the color grey. Usually in a more specified way, such as a last name, i think its spelled gray.

I actually prefer it with the "e." Although I don't capitalize it unless it appears at the beginning of a sentence or as a proper noun. ; )
I prefer "grey" because it's the less common spelling.
