americans mostly have white egg shells but here in the UK theyre most usually brown?

Supermarkets employ phychologists to make decisions like that for them, supposedly based on customer preference. I'm not kidding! The way the shelves are stacked, the colour schemes of the packaging are all chosen carefully.

We used to prefer white eggs too; then in the 70's people started to go organic and healthy, and a rumour started that brown eggs have more vitamins. It was because of brown bread. People thought the same rule applied to eggs.

The different coloured eggs are laid by different breeds of hen.

I had heard on a tv program that the chickens which lay white eggs are from the Chinese chicken. This suggests to me that the chicken breed in America is commonly descended by that breed.
Here in Australia, eggs are mostly white but when I buy them, they can be a mixture of both or just white or brown.

The color of the egg shell has to do with the variety of chicken it comes from, and different kids of chickens are farmed in different areas.
If you buy eggs in the Northeastern U.S., they're also usually brown (except at Easter, when white ones are more available because people like to dye them). There even used to be an advertisement in New England: "Brown eggs are local eggs, and local eggs are fresh!"
There are a lot of geese in the U.S., but you don't buy eggs from them in the stores, generally.

Brown eggs are more popular in England simple as that.
When I left school in 1986 I trained as a chef and my boss told me that if we got any white eggs I'd not to use them for boiling, if there were no Brown eggs I had to boil the white egg with onion skin which would dye it brown, it worked.

It depends on the breed of the hen, and also the diet they're fed on. A lot of eggs in US are goose eggs (because there are a lot of geese there) , which are white.

Hey i've often wondered that! Maybe American hens are fed on different diets or wash their bums with bleach!
