If the thermostat is stuck open, the engine won't reach operating temperature. If it's stuck closed, the radiator will boil over and the engine will over heat. If the temp gage fluctuates, the thermostat or sender is bad. Or it's low on coolant.

What are your symptoms? Many times a thermostat will cause the car to get hot right after startup, since it is stuck in the closed position. Once it finally opens, it will work well while the engine is warm.
