I leave mine on the tree and then about 3 weeks before Christmas I cut them and bring them inside for decorating. They usually last for a long time even inside. If the leaves begin to wilt I cut more and replace the wilted ones.

I would leave them on the bush as long as you can. You could hang them up to dry - they would last longer.
This is for Grumpcook: apparently holly comes in male and female. Find someone with holly that has berries, cut off a branch and bury part of it next to your holly. The idea is to root this second piece and have them cross polinate. Do this in Spring or Fall. This will ensure you get berries from then on. Check this out on a gardening site, just to be sure I'm getting it right.

The pigeons usually get the majority of our Holly berries! Pick the sprigs of Holly that you want to use for decorations-split 2lt (or larger)plastic drinks bottles with a Stanley knife or scissors and place them over the sprigs-secure with rubber bands or tape and let the birds have the rest! When I say pick I mean choose-leave them on the tree- looks a bit odd but will be gone by Christmas.

Cut some boughts in the next week. Put them (in water) in a cold garage or shed. Spray them with hairspray to stop the berries drying out and falling off.

wow your lucky, have a holly tree but never had berries..just leave them on the tree and bring in the house before christmas, the birds may eat a few, but you should still have plenty left.

Regarding Grupmcook's comment: Holly shrubs do come in male and female shrubs. Females have the berries, but need a male shrub to pollinate them. Just plant a male shrub near the female. One male shrub per every 3 female shrubs will do the trick...

Keep them outside as long as possible. When you bring them in, spray them with hair spray as this will make the berries last longer, even so most of the berries will drop when indoors.
