If she has access to a computer, she can take University courses on line. She can also check her Community College or other private school for Adult Continuation Education. I finished my Bacheloriat through the University of Athabasca, on line courses, mixed with at home studies and a number of attendance at the University itself.
Stay away from the University of Phoenix stuff. She should ask people in the field she wishes to work in and find out where they studied and where are the good schools. Good luck

For a mom who raises kids, that't the first priority. So, she needs something flexible. Being a real estate agent is very flexible, and she can make a pretty good money if she works at it.

she can learn computer and she can earn doing from that.
she can learn stiching and she can from it.
she can practice handicrafts work and earn from it
IF she is graduate she start taking tution for school going children and earn hand some amont from and she can increase her knowledge.
she can also work as insurace agent.
she can buy dress material from whole sale market and start selling to near by houses and her relatives and cousins. thru this she can earn. gradually it give a good profit.
she can learn paper bag making and start making paper bags and sell it to shops. so that use of plastic wil be reduced.

sorry your question is too general...
graduate in what? perhaps she could study designing, art, or plant arrangement because she's creative. erm... but is she good with her hands? and would she want a part-time or full-time job?
