Ooh, I HATE being called Ma'am. I don't think people say it as a slight, but it still feels like they think I'm old or something.

No. It's the feminine version of Sir. Soldiers use it to address female Officers for example. Saying don't call me ma'am is the same as saying "I am not a lady"

In this age of rampant rudeness, we must sustain any semblance of civility left . In more cultured societies, ma'am is used more in a respectful fashion than one indicating a woman's age. Accept it gracefully. Perhaps those who refer to you as "ma'am" simply respect you and have no idea you feel as though your vanity is being insulted...

Here in the smaller cities in Texas at least, it is a term of respect to a grown woman, regardless of the age of the person saying it or the person it is said to.

It's just a polite term to address a woman by. Sometimes Miss is seen as condescending unless the person is in their teens. HTH : )
