The books you are looking for are the "Duncton" series by William Horwood, starting with "Duncton Wood". This is followed by a further five books continuing the lives of a community of moles.

Your memory of some Christian analogy may well be to do with the moles' Stone worship - and in "Duncton Found", (I think), there's a group of evangelistic moles led by a prophet.

the first one that popped into my head was "watership down" by richard adams. It's got a moralistic bent and is an easy read for young adults/teens but could also be shelved as an adult book. I'm only remembering rabbits, but I haven't read the book in years. It came out in the 1970s, so it fits in your time frame.
I also thought of "the wind in the willows" which is less contemporary but certainly a book you might have read in childhood; you'd probably remember it as clearly a kid's book, though. definately has a mole, though.
One other one I thought of: Mrs Frisby and the Rats of Nimh (probably better known as "the secret of Nimh". By robert C. O'brien, it was made into a movie in 1982 and also won the Newbery award for excellence in children's literature. About a community of super-smart rats and a family of mice, plus I think there are some other tunnely type creatures, and a crow, as well.
I hadn't heard of "duncton wood" and I hadn't read the redwall books, but I just looked up the author of watership down and found a link crediting Watership Down with inspiring all of them, which I thought was interesting in the way it linked so many of the answers together (quoted with link below)

if it's about 2 animal friends, a mole and a rat. and a couple of weasels, is it "Wind in the Willows" by Kenneth Grahame?
or if it has a christian analogy, maybe the Narnian chronicles by C. S. Lewis? It's got Beaver and his wife, and a very valiant rat...

I think I may know what you mean!
The one I have read is titled "Redwall" and t he author is Brian Jacques
It is an awesome and great book! All animals with moles, mice, rabbits and weasels.
