Beautiful lighting, such as candles and mini lights.
Lots of plants and cool '50s music.
Many pretty or interesting things to look at.

As far as MUST have on the menu, I'd have to say, a huge variety of appetizers, stuffed mushrooms, a must for me personally.

As far as something different? I would LOVE to see a restaurant with more desserts to choose from.
I'm tired of only seeing a selection of only 3 or 4 desserts.

All restaurants seem to offer the same brownie and icecream.
I want to see some chocolate cake with icing and coconut pie, chocolate pie, blackberry cobbler, carrot cake, gingerbread with whipped cream and cheesecake with cherries instead of strawberries. Chocolate eclairs, cinnamon rolls and sugar free desserts too.

Why does the dessert list on the menu offer such few choices?
Cookies for dessert? PLEASE! That is not what I would call dessert.

Also, I would include asparagus and artichoke hearts on the menu as sides.

If you did that, I would reserve a table RIGHT NOW! YUM!

For me there are several things:

1) Atmosphere:
This is very important. Going out to dinner is not only about eating good food, but it can often be about a social scene and a nice place to have an enjoyable meal with your friends. You want it to have a nice appeal to it, otherwise it's just no fun to be in. And I don't just mean business-like atmospheres. Crazy, wacky, inventive atmospheres are perfectly find too. As long as they are welcoming to customers, it's all good.

2) Food:
Obvious the food has to be good. Healthy, clean, well-cooked, not rushed, and presented well. Not just thrown onto the plate. It doesn't have to be gourmet status, but I do appreciate it when I can see the chef's put some effort into presenting my meal.

3) Menu Diversity:
I usually go out to eat with my friends, and I can tell you how incredibly annoying it is when a restaurant has only one type of food. For example, seafood. Yes, I understand that you are a seafood restaurant, but it is logical to have a few other dishes for those who are not so inclined to seafood. You may wonder why would one who does not like seafood go to a seafood restaurant, but keep in mind that restaurants are mainly for social outings. Meny diversity is great because than friends can all get their opinion of delicious food.

4) Good Service:
Oh my gosh. This is very important. I don't mean to be a complete snob, but I hate it when waiters and waitresses shirk me off or put me on low priority. I love waiters and waitresses who check up on us often, who are interactive and interesting, who are polite, well-mannered, and able to admit their faults if they make a mistake. I understand a busy restaurant, but negligence is another matter.

Those are basically the main points that matter to me. I

Here is short answer, however it is something I have considered for many years. I have been to great restaurants all over the U.S. and here is what they have in common:
1. An independently owned ... one only possibly two.
2. A Carree Professional chef
3. Career waiters
4. A bar that knows how to pour a drink.
which if they have the above, the know the latter.

Also I have favorite meals at each restaurant and that is only what I eat when I go their.

the atmosphere is a huge aspect to a restaurant! You want to be able to be personal with the people you are with without feeling like the restaurant is over crowded!

For the menu...DEFINITELY need salad choices. Make sure there are vegetarian choices, nut free choices for those with allergies, meat choices, definitely need a variety thought with the meat, and seafood choices.

I love to eat out and a restaurant that has alllll of this is more welcoming because it has a great variety for more people!
