We don't actually have less water than we used to, we have more people and a shortage of useable water due to that, pollution, and climate changes causing areas that were once lush to become desert and areas that were once dry to flood.

China is a perfect example of water shortage due to bad water management and over population. China does have water but they've polluted most of it. They've also created drought conditions in certain areas by building dams and re-directing water to areas such as cities and factories, leaving the rural people to wallow in dust or drink heavily contaminated water.

Not just bottled water. Water is used in a lot of things that we consume in mass quantities, including, for one example, soda.

Probably not, you'll breathe, pee, poop it back out.

The one way that humans could most alter this planet is probably global warming (or nuclear war).
That will cause large areas to dry out, large areas too wet, and everything more extreme.

There are just areas that lack fresh water.
