For starters, human's by nature are visual learners. This can be explained further by looking into Evolutionary Theory. Although, most of our teaching is completed using lecture, auditory input, most learners are visual learners first and auditory learners second. The audio visual classroom aids give visual learners the stimlus that helps them retain the information. Adding to that the auditory aspect, they can then connect the two forms of communication to allow for the best possible learning outcome. AV aids have greatly enhanced learning for visual learners, who struggled with "getting it" through the traditional auditory instruction/approach.

Audiovisual materials are necessary in a collection for several reasons:
To meet the requirements of the people with disabilities act (visually and reading impaired people are likely to live in your community);
To provide people with audio books and music for listening enjoyment;
To provide appropriate materials to people who require graphical displays for better comprehension (more than 90% of us are visual learners);
To offer people motion pictures that can be used for learning and entertainment;
To provide people with access to globes, maps (especially local ones), musical scores, and games in support of educational and recreational pursuits.

Not a direct reference to the question but something which may offer some tips which can be applied to an educational setting is the following blog post;

It talks about the way technology is increasingly used within business settings and how it is expected to influence the 'office of the future'. I think these ideas can definitely be applied to uses in classroom/educational settings also.
