To soften stiff sheets: Wash them with a cup of salt. You might have to repeat the process two or three times. Do this after you've washed them the way you normally would. OR Add a cup of vinegar to the last rinse. (that is WH ITE vinegar)

RE:
How can I soften cotton sheets quickly without fabric softeners - which my daughter has an allergy to?

There should be liquid fabric softeners or fabric softeners in general that are there especially for those people with allergies. Just have to shop around a little. If no luck, try the health food stores. My mom says if you throw a CLEAN tennis shoe in with the sheets in the dryer, it should soften up that stiff cotton.

I don't know if there's any quick method. I think the first thing is to buy soft sheets in the first place. You might look into flannel sheets. The other thing is to make sure all the detergent is completely rinsed out. You can wash them with baking soda and detergent (the baking soda softens the water), then give them an extra rinse cycle. You could also add vinegar to the rinse cycle.

Then, put them in the dryer as usual. If you air-dry them in the sun, be sure the wind whips them soft -- or beat them lightly before you take them down.

Hope that helps.

You can buy Egyptian cotton sheets from "J.C.Pennys" they're very soft cotton but...here's the but! they wrinkle real bad so, you might not like them, my wife sent ours back.
I have allergies but, I don't mind the crispness, they feel fresh.

Buying the highest thread count that you can afford will help. You can also add white vinegar to your final rinse cycle or try one of the All Free and Clear products.

You could try those "dryer balls" We have them, they help soften and help dry your things faster. You can find them in most laundry detergent isles. They are two hard balls that tumble around with your clothes in the dryer.
