I am planning to open a BBQ restaurant in California.
I would like to hear some opinions from my future guest!!
1) What type of food would be the best in LA?
2) Thinking about 40~50 seats. How many workers would be the ideal number?

Get as short of lease w/in 1 year as possible so you are not stranded if the venture fails.
Normally sit down service is about 1 waitress per 4 stations, more if you are formal, less if you are in slack time. Bus boy/girl will be a hit and miss as you settle in. 1 hostess unless it is meal time or night time then you need 1 for seating and possibly 1 for phone/welcome. If you do take-out, a 3rd is helpful.
Cooks - depends on what you offer, salads, desserts, and how extensive the menu it. The number will also depend on how much line work is involved and how many items you order in from your supplier.
You will need at least one manager per shift. A good accountant/book keeper to handle till counts etc.
As a BBQ you have excellent timing for this growing trend. You may want to consider offering different heat level of sauces. You may want to consider "exotics" such as emu, buffalo, squid. Check a local thai/chinese restaurants for other exotics. Give your sauces local/special names - which don't require copyright payments. Out of My Dep Squid etc.

If your going to do BBQ, make sure its gonna be cooked over wood. Check out the Travel Channel's program that featured the best of the best in BBQ.

With only 40-50 seats equates to be between 10 and 13 tables so I would say about 3 waitresses. A manager that will double as host/hostess.

If you can get a really good cook, Mexican food. Not just the usual tacos and texmex. Real Mexican food.

Start with 3 waitresses and add as customers begin to come in.

Great cook, pay her plenty.

Two young kids to clean.

You should probably make burgers and steak. You should also have about 10 workers.
