Come on now, you can't just be super nice with everyone. Just because they accepted you, doesn't mean you have to go there. If that's the college you want to go to, than go. Just think about it. YOUR CAREER, depends on this. And you messed it up because you couldn't say "no". I'm not trying to be mean, just trying to make a point. Okay, good luck.

I think that if you have been formally accepted to the school that you need to write a letter and keep a copy for yourself. That gives you security in knowing that they even received the letter first off. Anyone can delete an email. Just tell them that you appreciate their taking the time to assist you in your search for an educational facility and that you have made your decision to attend another school. Sign and date it, and send it off. That way it will be put in your file and they will put it all away. If you change your mind later on and decide to go elsewhere, then they will know that you have good manners at least.

Simply write to them saying something along the lines of thank you for all their help and that their institution is a wonderful place but after careful consideration you have decided to study elsewhere. Schools here all the time, they hand out more acceptances than spaced because they know a percentage of potential students will turn them down.

Cut and paste what you just said into an email. Once they find out you're "no intrested," they'll be "no intrested" too.
