I don't play piano myself, but if I did I'd learn "Morning Has Broken," the hymn popularized by Cat Stevens. I'd learn other songs by him, like Don't Be Shy and If You Want to Sing Out, Sing Out. If you haven't heard those songs, you should listen to them.
