You can reset the default in your printer properties. You can reset default in document properties. You can individually check the color associated with each document as you print.

check your defaults on your printer. Additonally check wiht oyur "help" menu on your printer - hp differs from lexmark which differes from xerox which differs from brother - so just check on the help menu and it should be able to walk you through - you may also go to the website of your printer manufacturer.
