Put them in your old shoes

If you have a cellar in a house that would be a good place since it is cool and dark. I've also heard of putting them in like a playsand like box with sand putting the carrots in vertically, in a cellar. Coolness keeps them crisp and helps to prevent re-growth.
You might even try ? leaving a few in the garden soil and covering them well with a mulch like straw. Then dig a few as you use them. HOPEFULLY the winter field mice won't discover them and have a feast.

The document in the link, for commercial growers, suggests that one of the most effective ways to store carrots long term, is simply to refrigerate them, unwashed, with their tops still on. Check it out.

I have had fairly good luck in well drained soil just leaving them in the ground. I am in Sunset climate zone 14 with some winter frost Nov--Feb.
