I need help with a traditional Thanksgiving Turkey..what spices ..marindades etc.. Bring out the tradiotnal turkey flavors. Please any help would be appreciated.

My favorite recipe is to stuff the cavity of the turkey with halved oranges that have been studded with cloves. Also squeeze the oranges inside and out of the turkey. Then make a paste of brown sugar and butter and stuff that under the skin of the turkey! This recipe always wins rave reviews, even with the picky people.

As one of 6 daughters of a great cook, we all swear by Bell's Poultry seasoning in the stuffing. It just seems to have the right blend of everything. For the gravy we use the turkey juices and a product called Gravy master to give the gravy good color and good flavor. The right amount of salt is important to the gravy as well. Sometimes it seems like you're adding a lot but it takes quite a bit to bring out the flavor. For liquids in the gravy we use what is drained from all of the vegetables. Taste testing is important when making the gravy. We cook the turkey in an electric roaster and use only salt, pepper and butter to crisp the skin. We are generally pretty health concious but during the holidays we all through our healthy eating right out the window and enjoy butter in everything!!

I've never seasoned a turkey before cooking it. The meat is thick, so seasonings you put on the surface aren't going to get down into most of it. The main problem I see with preparing turkey is that if it's cooked wrong it gets dry and flavorless. I've found that cooking in a roasting bag keeps it from drying and also collects the juices to make gravy.

If you are not going to stuff your turkey you can fill the cavity of the turkey with lots of different fresh herbs. Make sure you have sage in the bunch. And throw in some cooled sauted onions. I rub the outside of my turkey with lots of butter and I sprinkle salt, pepper and poultry seasoning onto it.

I don't think my grandmother ever puts any seasonings on her thanksgiving turkey. On the turkeys I've made I've used the traditional thyme, sage, rosemary on oven roasted turkeys. I like cajun or asian marinades on deep fried turkeys.
