Originally they didn't. Gentlemen wore jackets and waistcoats and an extra pocket was unneccessary.

Short sleeved shirts issued to the military in India had breast pockets so you had somewhere to keep your pencil and notepad. The idea caught on with casual shirts in the UK and now most have pockets. There's still a school of thought that regards shirts with pockets are rather common so the more expensive formal shirts still have no pocket.

And how sad is it to have known that.

pockets were started by Americans. You will find that European shirts do not have front pockets.
