Usually from something historical in the community they are from.

Most of the time, it has something to do with wat city or state the team is in. For example, the Pittsburgh Steelers are called the "steelers" because of the steel factories and work that used to [and still is] done in Pittsburgh

Ohio State is called the Buckeyes because the Buckeye tree is Ohio's state tree

The San Francisco 49ers are called that because of the famous gold rush...

And sometimes names are picked for random things, like LSU are the tigers, which has nothing to do with louisiana. And Atlanta. Have u ever heard of falcons in Atlanta?

Sometimes they'll hold a contest to get fans' ideas. Otherwise, they'll base it on something unique to the area the team calls home. (New England "Patriots" referring to the old minutemen, the Houston "Oilers" referring to the petroleum industry down there, Minnesota "Vikings" referring to the Nordic history that is so prevalent there, etc.)

Sadly, today, it seems that marketing plays the biggest role in what a new team calls itself.
