Why not try doing something with energy? Can you make a perpetual motion device that can free us of high energy bills? Or maybe a more efficient engine model? There are millions of projects just in the electronics side :)

Anything but the baking soda/vinegar volcano. I was a Science Fair judge once and we were told to rate these volcanoes as "average".
