Anyone know the name of this?

There is a science that studies predictions basied on the actions of people. Not on a large scale like the game theory. But on a small scale just depending on how they position themselves, speak, dress, look. I don't know if it should be called a science but it is the backbone of many magic tricks, and i would like to know it's name.

All of the stuff you described falls under either linguistics (speech patterns) or paralinguistics (body language, dress, etc...). Both linguistics and paralinguistics fall under sociology. Sociology is both the study of society and societal influences on individuals. So, I think this is what you're talking about.
