Moussaka : Minced meat with aubergines, cheese and bechamel sauce

Saganaki : Basically fried cheese, but tastes better than it sounds

Stifado : Meat stew (don't be surprised if its served cold) - I had an octopus stifado with plums on Alonissos a few years back and it was delicious

Kleftiko : Very slow cooked (usually) lamb which falls off the bone and melts in your mouth

Dolmades : Vine leaves stuffed with rice

Spanakopita : Spinach pie

Tzatziki : Garlic, cucumber and yoghurt

and, of course,

Souvlaki : Meat and veg on a stick (if you wrap the chicken pieces in bacon before grilling, its so much nicer)

First of all lets get this straight the turks stole Baklava along with the Syrians. it is as Greek as it comes. Some good greek delacasys are Pastichio= ground meat with noodles and dough on top, hilopites= greek flat noodles, melamakarona= a greek cookie dipped in honey and nuts, spanakopita= spinach and feta chese with Filo dough, Tiropita= Chese pita, lamb, rabbit, deer,
little small fried fish, and vasilopita= a sugary cake made for New Years with a coin in the middle. Whoever gets the part with the coin get good luck for the rest of the Year!

Since you ask for famous, but local Greek foods, I would say: artichokes, with fresh peas with egglemon sauce!
Lamp pie
Staffed grape leaves (I prefer the ones without meat)
And I could go forever!

Greeks eat more pasta than italians, believe it or not.
Imam Baildi, and Kokoretsi are two of my favs.

kokoretsi-grilled on a spit(lungs,heart,kidney and intestines of sheep
or goat) very popular in greece
yemista-stuffed pepper and tomatoes
youvetsi-meat with noodle baked in the oven
soudsoukia-spicy meatballs in tomatoe sauce
pitas- made from cheese or spinache
all types of seafood
greek salad
ouzo-greek drink
baklava-greek sweet in syrup
kadaffi-another sweet in syrup
and thousands more come to Greece and taste our wonderful foods. the best in the world and oh so healthy.
