There are more mountains to the west of the Mississippi because mountain ranges are more common on Active Plate Margins. The Pacific Oceanic Plate is moving eastward while the North American plate is moving westward from the Mid Atlantic Ridge (which is a spreading center). Since the Pacific Plate is made of Basalt and Basaltic rock is more dense than granitic rock, it is Subducted under the North American Plate (Density stratification). During Subduction while the two plates push against each other, wrinkles the land pushing it slowly to the sky eventually forming mountains. The Rocky's are much higher and greater in land mass than the Appalachian mountains.

As this process carrys out, the Mountains in the Western; North and South America continue to grow today!

Well, The mountains to the east of the Mississippi River (the Appalachians, the Smokey Mts, etc) are older, and that is why they are smaller and more rounded. The Mountains to the west of the big muddy (the Rockies, the Sierra Nevada Mts, etc) are younger. That is why they are taller and steeper. But to Answer your question I would have to say that there are more mountains to the west of the Mississippi.

I think that looking at a topo map might be a bit deceiving, as the mountains to the east are not as defined as those to the west.

I really can't prove my answer to you, but I'm sure that it is correct.
