I was listening to a friend's Iron Maiden CD and their vocalist didn't play an instrument at the time and that made me wonder what he would do on stage while the other band members played.

They usually go back stage, sometimes to rest their voice while the rest play

On their 'Live After Death' videotape, Bruce disappears from the stage. I can only guess that he goes backstage and drinks some tea or does something else to sooth his throat.
According to Ross Halfin, the guys in Def Leppard used to go under the stage and have sex with groupies.

Or, if they are a real heavy rock God, they would stand on stage, and flail and gyrate wildly (see Robert Plant, Paul Rodgers, etc)
