A kinetically stable substance has a high activation eregy barrier that prevents it from reacting quickly unless a large amount of energy is supplied.
A thermodynamically stable substance has an exothermic enthalpy of formation, or has no other substances of lower energy into which it can decompose.

Kinetic stable - the substance stability at 0 C and
energetically stable - stable enough from destroy or decomposition

The only difference is... 1. Turn out blankets are very durable (stable sheets can be) 2. Turn out blankets are water proof (stable sheets aren't) So it doesn't matter if you use a turn out blanket or stable sheet when the horse is inside, as long as it fits the weather conditions
