Oh that sounds like it would make wonderful French Toast. The only thing I would do differently than using the regular bread is to decrease the amount of cinnamon and sugar as the banana bread alone should have enough taste. I have actually used raisin bread for my French Toast but did the same.. reduced the spices.

REAL French toast was called "pain perdu," which means "leftover bread." You know how you make french toast with hard bread? That's the same thing.
It is also called "oeuf pain perdu," the "ouef" meaning "egg." That's because you dip the hard bread in egg to make French Toast.
