Fantasyland was on the original drawing boards from the time Disneyland was conceived and was going to be built in Burbank. Walt created each of the lands to house characters and ideas for the park. Apart from a Christmas celebration, Disney avoids any overt religious theming to avoid offending any guests not of that persuasion, so I doubt Fantasyland is in any way connected to Genesis.

Walt Disney was a religious man so he most likely read Genesis. It is almost certain he read it in his youth, before he created Fantasyland. Answer to your question is YES.

Are the two events connected? Not likely.
