SWEET POTATO CASSEROLE- This one of my family favorites. It's a two for one. You can either use it as a side dish or dessert. While I have included measurements, every really is to taste. When cooking the potatoes roast them in the over instead of boling them. It gives them a much richer flavor. Roasting in the skin makes it very easy to peel. Enjoy!!
FILLING:
2 med. sweet potatoes, peeled and cooked
1/4 c. packed light brown sugar
2 tbsp. honey
1 egg
2 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
Pinch of salt
TOPPING:
6 tbsp. unsalted butter
1/2 c. packed light brown sugar
1/4 c. honey
2 tbsp. whipping cream
1 egg
1 tsp. vanilla
1 1/2 c. pecan halves
Pinch of salt
Preheat oven to 350 degrees. Mix filling and pour into casserole dish or pie shell. Mix topping, pour over filling. Bake until set, about 45 minutes. Cool. Top with Cool Whip or vanilla ice cream.
NOTE: If used as pie, use 9-inch deep pie shell.

My Aunt's Cheesy Potatoes are to die for!
Mix together:
1 bag of frozen hash browns (the square ones are best) I can of cream of chicken soup, 8 oz. of sour cream, 1 medium onion diced, and 1/4 cup of melted butter and 3 cups shredded cheddar cheese, I use mild cheddar. Put in buttered caserole dish. On top put 2 cups crushed corn flakes mixed with 1/4 cup of butter for crunchy topping. Bake at 350 for about 45 minutes. Don't let top get too brown.
