The information on your resume should reflect who you are RIGHT NOW. If you change your hair color, you should edit the resume. Simple.

You should list your current hair color on your resume. Everyone knows haircolor is easily changed, so that information is really only important to someone that wants to cast you without the trouble of changing your hair color.
