You guys asking these questions need to be really clear about defining "production".
The Chrysler doesn't have two wheels so I wouldn't call it a motorcycle no matter what it looks like. Chrysler even states it's not a motorcycle but a vehicle to display its Viper engine.
You can modify a bike to be fast. The Hayabusa owns 7 of the top 10 speed records for motorcycles but they're also modified bikes (Turboed for example).
The fastest production run of bikes (vs a limited run or specialty built bike) would be the 1999-2000 Suzuki Hayabusa. Potential top speed of 206mph (gearing potential). In reality, you probably could get to 196mph as I understand it.
In 2000 the companies collaborated and decided that a 300kph top speed would be in their best interests. The Hayabusa went with a rev limiter, which can be modified with a TRE to again reach top speed. The Kawasaki ZX12 went with a tach adjustment as I recall. A much simpler modification to remove the speed limitation.
Currently the 2007 Kawasaki Ninja is a tad faster than the 2007 Hayabusa. Both can only reach 186mph because of the limitations inposed by the manufacturers.
There is a jet turbine motorcycle (Jay Leno has one) that'll do 234mph. The guy who makes them uses surplus jet engines and builds the bike around it so I wouldn't call it a production bike.
There are others can also have the power to reach high speeds but aren't stable enough to really make the attempt. The Boss Hoss for example. It's capable of reaching 220mph or so but after reaching 170mph on my Hayabusa, I can't imagine sitting on an exposed bike like that and even getting close to that speed.

Apparently most sports bikes will only reach 300km/h. This is as far as their speedometers go anyway... MV Augusta have crossed the line with the 312R: with the 312 being top speed in km/h. I am sure the Suzuki Hayabusa, Kawasaxi ZX-14 and Ducati 1098 (and others) are all capable of exceeding 312 but the manufacturers don't advertise the fact.

one thats is faster than others made in the year of production per
international standards made up of several companies.
unlimited or modified bikes are usuallty faster than the production sold at dealers.once they are changed they are no longer production,or customized they are no longer production sold from the dealers.
liability questions arise at that point, and most factory warranties cease once it is done,as no longer being production and not meeting manufacturing specifications for the model and year of motorcycle.
ducati, aspirilla, suzuki, kawasaki, even triumph have some very fast bikes, with names such as monster, ninja, huyabusa and many others and maintain the selling per top speeds listed.
so until 2006 hyabusa had the title the 14 took it away, and they are fighting for the speed title again,in the late seventies triumph had it at one time then kawasaki took it away and held it for many years,as far as drag races goes a dual engine norton was ripping many bikes apart at the international drag races for years aLSO.
harley has few to its name also in drags.
but the jet engine bike seems to be the top, but bnot of standard production,so it leaves few to choose from, but right now as sold to the public for road use it is the ninja -14
addition,
triumph had the 1200 daytona it earned the name dr death, cause it seemed to suck whom ever rode it into very high s[peeds,a fellow wrercked one in i think arizona he hit a rock wall head own due to centrifical force from high speed his speedometer stuck at over 195, high speed is only another way to die quickly and painfully
