The only 2 vegetables starting with A and ending with N are the Armenian cucumber and the American Groundnut. Neither of them are round.

This goes for both common and scientific names. It couldnt be a slang name could it?

There is no such thing as amaran. You must mean Amaranth. The only other vegetables that I can come up with are Armenian cucumber and American groundnut.

Lettuce, Beets, Leeks-a relative to the onion,
Jicama-belongs to the potato family, Cabbage,
Broccoli, Collards.

Armenian cucumber (Cucumis melo Flexuosus group)

American groundnut (Apios americana)

There is nothing called Amaran, but Amaranth (Amaranthus cruentus).
