Yes you certainly can - but be careful not to name specific persons or places, or even franchises if you do not want legal repercussion.
i think there is a lot to tell about working in such places and it should be exposed.
Publishers will have their legal people check it over for libel anyway, so if it makes good reading, go for it.

It's legal.
The only way it's illegal is if it's someone else's book or you know they were planning the same thing and you took all their ideas, OR if you claim it's all true when it's not (you could be sued for libel - the written word version of slander).
