The hooked shape is for the shepherd's staffs who saw the angels singing to the Lord when Jesus was born. Upside down it becomes a J for Jesus.
The white part is for Jesus's purity and how He never sinned, and the red stripes are for the blood He shed on the cross.

The candy cane represents Jesus. The red on the candy cane represents Christ shedding His blood for us. The white on the candy cane symbolizes Christ as being pure. When you turn the candy cane upside down it looks like a J the J stands for Jesus.

Birth of the Candy Cane
Around the seventeenth century, European-Christians began to adopt the use of Christmas trees as part of their Christmas celebrations. They made special decorations for their trees from foods like cookies and sugar-stick candy. The first historical reference to the familiar cane shape goes back to 1670, when the choirmaster at the Cologne Cathedral in Germany, bent the sugar-sticks into canes to represent a shepherd's staff. The all-white candy canes were given out to children during the long-winded nativity services.

The significance of the candy cane as I was told some years ago in church started years ago. A man wanted to represent the life and ministry of Jesus. The shape of the candy itself represents a shepherd's cane. The red ribbon represents the shed blood of Jesus.
