Pickled beets are called pickled beets.
Pickled eggs are called pickled eggs.
Pickled peppers are called pickled peppers.

Pickled cucumbers are simply called pickles. Why? Where did the cucumber go? What makes it different from the other pickled foods that it loses its original name altogether? Why didn't the other foods lose their names?

because pickled cucumbers are more popular.
they also don't detain their original taste in some varieties in pickles.

Same as apple wine, pear wine, and grape wine - only one is just "wine."

As with brandy. Just "brandy" is grape wine brandy.

If the other foods lost their names, we'd have Pickled, pickled, pickled and pickles.
