I have a varying 1" - 2" gap between my metal & glass fireplace screen & the natural stone & mortar wall / chimney. I know the paper on the fiberglass will burn, but will the fiberglass?

Well you have spend a lot of money on that fireplace and now you want to save a buck?????
Don't be stingy and you will need to look an fiberglass for the rest of your life. Anyway fiber glass insulation is not carcinogen material on low temperature, but on high!!! it is another story. At least I think it is.

The fiber glass itself is naturally flame resistant but you should look for a product made of ceramic. This can be found at most heating supply houses or if the gap is narrow enough you could try a woodstove gasket. In either case remember that a fire place gets hotter than most heating applications.
