I'm looking to make it in the $300 range. They're in their early 20's.

A fat lot you guys know about Seattle. We had a great summer, only 3 days of rain from May 15th to October 15th.
I would send them gift certificates to their favorite restaurants....Ruth Chris, The Met Grill, Anthony's Home Port....all can be bought online.

If they like to get out of the city once in awhile, you might consider getting them a weekend vacation package somewhere like the San Juan Islands, Ocean Shores, Victoria, or maybe even Snoqualmie Falls (the Salish Lodge overlooks the falls).
Depending on what else they like to do, you might consider ski passes for Snoqualmie Pass or an annual membership to Woodland Park Zoo or the Space Needle.

A membership to the EMP (Experience Music Project) would be great if they are into music at all. Yearly memberships start at $65.00 for two, and go up from there. http://www.emplive.org/
Depending on how far away from Seattle they live, maybe a book of ferry tickets to get over to Seattle or a certificate to one of the restaurants already mentioned.

Our daughter lives there and their favourite activity is dinner down town, byt they also enjoy going to the indian village for a salmon BBQ. They enjoy the boat ride.
The Clipper trip to Victoria and an overnight there is fun too, we've done thast we have visited.
I think I would vote for the Clipper - should be able to get an overnight package for under $300.00 US
