Personally I believe it doesn't make me more empathetic, because no matter how well written no one can truly give an full accurate story with all the emotions and feeling that it entails.. I believe reading war stories gives me an insight to the experiences of others. But I'd like to have an opinion on how other people thought and why.

Reading history will give you the context for what you are reading.

Empathetic for whom?

It may help some people but either you are an empathetic person or you are not. i personally enjoy watching war documentaries to learn about what happened. no matter what, you will never know exactly how it was unless you experienced it firsthand. for years i have asked my father to document his time during vietnam, he has yet to do this but does talk about it often. for years he would never open up about his experience.
