It can greatly depend on your definition of courage. As far as I'm concerned, anyone who would put themselves into a career (like, as you say, firefighters or soldiers) where they are fully aware that their life may end to save that of another, than in itself is one of the most couragous acts a person can carry out. My opinion.

In my opinion courage has many definitions, on of them being :courage is believing in something and not giving in to the others no matter what the consequences might be.
One example would be during the Armenian Genocide (1895 to 1923) 1.5 million Christian Armenians were massacred by Ottoman Turks many of which were given the choice to change their religion or die.
As of right I think the most courageous career to have is a soldier and fight in Iraq and Afghanistan to spread freedom and secure America after the 9/11 attacks.

First, I want to point out that it depends on the individual. For example, fear of public speaking; courage is when a person found strength in giving a public speech despite his/her fear of it.
