want a flareon? go to celadon department store, and buy a fire stone. then go into items, and pick stone, then pick eevee.
want a jolteon? celadon dept store - thunder stone
want a vaporeon? celadon dept store - water stone
want an umbreon? trade to ruby, sapphire, or emerald, make it happy on that game, then level to evolve
want an espeon? trade to ruby, sapphire, or emerald make it happy on that game, then level to evolve.
why trade to ruby, sapphire, or emerald? there is no time element in fire red or leaf green. so you need to bring eevee to a game where there IS a time element, which you find in r/s/e

The evolution stones are in Celadon:
Flareon-Fire
Vaporeon-Water
Jolteon-Thunder
Espeon-Happiness/Day
Umbreon-Happiness/Night
To get Espeon and Umbreon, eevee has to evolve during the day for espeon and during night for umbreon
