how many days before thanksgiving do you defrost the turkey??

It really depends a lot on the size of the bird - of course, a larger one will take longer to defrost. For my 16 pounder, I'll take it out tomorrow morning and leave it in the fridge until Thursday morning. I tried doing the cold-water-in-the-sink thing a few years ago and the bird was still pretty well frozen on Thanksgiving morning. I guess it might work in a pinch.

No. The outside of the turkey would start to cook long before the inside ever got defrosted. The whole thing will come out yellow and gross. The best thing to do is brine your turkey. Alton Brown, who has a Food TV show called "Good Eats," explained the process and the science of how to do this in a safe, healthful way on his Thanksgiving special a few years ago. It works great! You need a bucket, some salt, and some spices. Check out Food TV's website for info. But don't microwave it - you'll ruin it.

The night before just put your turkey in the sink (wrapped) and soak in cold water!
