The best times are definitely in the fall... October and early November, or mid January through February. Avoid the holidays!
My grandparent-in-laws love to come to Disney, and their favorite things to do are Animal Kingdom and EPCOT. Animal Kingdom is absolutely beautiful, with a lot of things to see, and it's a very relaxing day. Do the Kilmanjaro Safari ride! At EPCOT, the World Showcase is fantastic. There is so much to see, and great food.
Good luck planning your vacation!

We always go in January. After the first week though because the new years celebration is huge. Lines are much shorter, and there are not nearly as many people. Weather can vary at this time. It may be a little chillier. The most I've had to wear is a heavy sweatshirt.

The week after Labor day is empty. Most students are back in school and the conventions have not started yet. Most of the line waits are around 10 minutes. Also the resorts are so empty that you get a preferred room location (near the buses and food) without paying for it.

The best time to avoid crowds at Disneyworld are during these non-peak months:
Late September - mid November
Late January - early April
Be sure to avoid all holidays and weekends at theme parks.

Your best bet to this answer is pick up the book
"The Unofficial Guide to Disneyland 2007" - It gives you all kinds of points and tips - including all age groups.
Check it out on Amazon.com - you can purchase it cheaper than in your local bookstore and won't wait so long to get the order.

I think in the winter season (but not during Christmas, because ALL of the kids will be intruding). Also, maybe late fall.
