Any that you can imagine. From bongos to a tuba, they've all had center stage at some point.

I'd like some drums, a piano and a bass guitar at minimum. Then build on that adding a sax and then a trumpet.

All instruments can be used. In traditional or New Orleans jazz there would be a rythym section of drums, double bass (plucked, not bowed) and banjo. The Melody would be covered by cornet (or trumpet), trombone and clarinet. The clarinet player might double on saxophone. Sometimes the double bass might be replaced by tuba.

Bee Bop would often feature trumpet and saxophone.

Drum set, bass guitar (electric or upright), piano (or keyboard synthesizers), trumpet, trombone, saxophone, flute, occasionally clarinet, and various percussion instruments such as bongos, congas, vibraphone, and xylophone. It all depends on the overall sound and mood the band wants to create. Older groups and artists such as Miles Davis, and Duke Ellington, have that classic "jazz" sound, while newer jazz artists such as Galactic, Medeski / Martin & Wood, and Karl Denson, have fresher, funkier sounds that are more like hip-hop, and dance music than traditional jazz.

Jazz bands tend to include a few trumpets, a drum set and possibly other drums, a couple of trombones, a bassist (either electric or standing), a few saxophones(alto, tenor, and possible baritone), and there may be a few clarinets thrown in to mix it up once and a while.
