If we use Norman Rockwell as an authority, turkey is a definite.

So let's look at the menu...

Turkey
Mashed Potatoes (real, not flakes)
Chestnut stuffing
Fresh green peas
Fresh green beans in mushroom sauce with slivered almonds
Creamed pearl onions
Asparagus
Black and green olives
Hot biscuits
Cranberry sauce, whole berries, not jellied
Banana nut bread
Pumpkin pie (with or without vanilla ice cream or whipped cream)
Apple pie (good with a little cheddar cheese on top)
Fruit cup with sorbet (as an appetizer)

What is traditional, depends on what is traditional at your house. Some people have duck or goose, some have pork or beef roast. Set your own traditions, cherish them, but leave room for others.

Traditional Thanksgiving dinners vary from family to family. Turkey is a staple at most holiday dinners as it can feed a large number of people. Some famlies I know also have a roast or a ham or an enormous amount of seafood pasta. The side dishes are a matter of choice and may include: soups, mashed potatoes, rice, pasta, yams, sweet potatoes, green beans, green peas, blackeye peas, greens, corn, cranberry sauce, gravy, stuffing, salads,breads or rolls...
Prior to all this there are usually appetizers: shrimp, crab dip, vegees, spinach dip, eggplant dip, edamame, sushi, rice balls, egg rolls, hummus dips, salsa, gaucamole, chips, pita chips, cheeses, crackers,...
Then after all of this, desserts: cheesecakes, ice cream, rhubarb pie, pumpkin pie, apple pie, chocolate dipped strawberries and rasberries, chocolate cookies, cookies, cream puffs, caramel apples,...
The thing to remember about Thanksgiving is it is about family and friends and thankfulness for being able to care for them and be cared for by them throughout the year. Most people I know make their most loved foods in celebration.

A roasted turkey. Cranberry sauce. Mashed potatoes and turkey gravy. Candied yams. Giblet stuffing for the turkey, although if you make it IN the turkey the amount is too small for everyone. I make the stuffing in a roaster. Bread rolls. My mother's whipped cream fruit salad. Corn pudding. Also a relish tray, with various kinds of pickles, olives, scallions, and other small veggies. Coffee, ice water, or white or blush wine.

For dessert, pumpkin pie, no substitutes allowed. No pumpkin cheesecake, parfait, torte, or any other nonsense. Pumpkin pie, whipped cream or vanilla ice cream optional. As an extra, maybe an apple or pecan pie. But always pumpkin pie.

Turkey, stuffing, gravy, mashed potatoes, green bean casserole, rolls, cranberries, sweet potatoes, ham, pumpkin pie.
Every family is different - we don't do pumpkin pie nobody likes it so we have a chocolate pie and pineapple upside down cake we also don't like sweet potatoes.

the most traditional items are: Turkey, cranberry sauce, stuffing, mashed potatoes and gravy, sweet potatoes, a veggie like green beans or brussels sprouts, and pumpkin pie.

i like each thing in a time-honored Thanksgiving dinner different than for the teach piece, the turkey. in no way did like all of it that plenty, neither did my kinfolk. We oftentimes had something else for the beef area of the dinner.
